
Here is my menu for next week. This time I plan to try out Gluten-Free Mommy’s Baked Eggplant Zucchini Spaghetti, which looks like a winner for my tomato-loving Prince. And I also want to thank Thomas at The Gluten-Free / Casein-Free Experience for posting The Moosewood Cookbook’s The Polenta Pizza Pie, in response to my search for a cornmeal-based pizza crust. I’ll give that a whirl next week too!
Tomato & Basil Quinoa with Chorizo and Peppers (from the back of the Seeds of Change quinoa box!)
Leftover apple muffins from the freezer
Parallel kids’ meal: quinoa but hold the chorizo and peppers, side of Applegate Farms or other nitrate-free hot dog, apple muffins or applesauce
Crustless Spinach quiche (adapted from The South Beach Diet Quick and Easy Cookbook)
Cornbread muffins
Tomato and arugula salad
Parallel kids’ meal: Egg “McWaffle” on GFCF waffle of choice, corn with butter substitute, fruit of choice
Polenta Pizza Pie (adapted from The Moosewood Cookbook, The Gluten-Free/Casein-Free Experience)
Spinach salad
Parallel kids’ meal: Hopefully The Prince will like this! But an alternate idea might be the polenta crust topped with tomato sauce and soy or rice mozzarella
Beef and Sweet Potato Stew (from The Mom’s Guide to Meal Makeovers)
Parallel kids meal: beef broth alone, sweet potato taken out of stew and mashed with a little butter substitute, side of sliced peaches
Cranberry Pork Roast for the crock pot (Specific Carbohydrate Diet Recipes online)
Mashed potatoes
Green bean salad with cherry tomatoes and balsamic vinegar dressing
Parallel kids’ meal: if your little Prince or Princess will not eat “the other white meat” plain (without the cranberries), maybe substitute sliced, roasted or grilled boneless chicken, side of mashed potatoes but offer green beans alone with no balsamic dressing or tomatoes.
